Makes 3 Servings
Ingredients
Half of a 1 lb bag of Pasta (I prefer Bowtie)
Pesto (any kind you like!)
Half of a large red onion
One avocado
Trader Joes Herb Feta cheese
One roma tomato
Cook Pasta until al dente
Strain, and reserve 1/3 cup of pasta water
Cut up veggies (diced)
Mix pesto with cooked pasta, add to your liking, I used about 2-3 tablespoons.
Mix in small amounts of pasta water until pesto is at the consistency of preference (you won’t need all 1/3 cup)
Mix in your veggies
Sprinkle about 1/3 cup of feta to top
Enjoy!
Great for leftovers
This pasta salad is great for an easy summer time meal, lunch or dinner. Stores well in the fridge and is great for leftovers. It’s fresh, it’s quick, refreshing on a hot day, and delicious!
